Quick Pickle

 
 

 There’s nothing as refreshing and as easy as a “quick pickle”—made in a brining liquid of vinegar, sugar, and salt. Though there are many different pickling methods, I have adopted this quick and simple version to practically pickle anything that is fresh and in season, like cucumbers, radishes, cabbage which make a great contrast to any salad, meat or fish. Just 90 minutes later you’ll have a pleasantly crisp, refreshingly tangy homemade treat that’s much tastier and crunchier than any canned or jar from the store!

 

Ingredients:

Fruits or vegetables, any, as needed

Brine, see options below, as needed

Seasonings, any, as needed

 Choose your Fruits or Vegetables

Classic ideas include Cucumbers, onions, apples, cabbage, etc.

  Prep ingredients

Peel or chop away rinds, stems, or any other parts of the future pickles that you don’t want to eat. For this quick pickle you want to prep you vegetable quite thinly or small to create more surface area to cut down the brining time. Rinse fresh herbs.

Pick your brine

Broadly speaking, you want to use a savoury brine for vegetables and a sweet one for fruit.

Savoury pickling brine

400 g Vinegar, white wine

400 g Water

80 g Sugar, granulated

20 g Salt

In a bowl or pitcher, combine vinegar and water. Add sugar and salt, and stir to dissolve.

Sweet pickling “brine”

400 g Vinegar, white wine

400 g Water

265 g Sugar, granulated

In a bowl or pitcher, combine vinegar and water. Add sugar, and stir to dissolve.

Brine chosen ingredients

Combine chosen ingredient and brine. Let stand 90 minutes.

Strain and serve

Strain to serve.
