Nick’s Nutty Granola
So here it is… My infamous healthy, light, crunchy, sometimes referred to as ‘crack like’ Granola recipe. You can substitute any of the nuts and seeds to your preference.
1 cup can be used as any size measurement as long as it is used to measure all ingredients, the ratio stays the same.
Ingredients:
Base ingredients:
5c Rolled oats
2c Shredded coconut (desiccated or threads is fine)
1c Slithered almonds
½ c Pumpkin seeds
½ c Sunflower seeds
1/2 c Sesame seeds (white)
whole nuts:
½ Cashew nuts
½ Brazil nuts
½ Macadamia
½ c Pecans
½ c Hazelnuts
1c Walnuts
Liquid:
1c Coconut oil
1c Honey
Measure dry ingredients
Measure the Base ingredientsand combine in a large pot or mixing tub.
Measure the whole nuts and in two separate batches pulse them in a food processor until semi broken up and add them to the base ingredients.
Measure wet ingredients
Measure the Liquidand bring to the boil in a small saucepan (be careful not to over boil)
Add the hot liquid to the rest of the ingredients and combine with a pinch of salt thoroughly until all the dry ingredients is well coated.
Tray and bake
On flat oven trays lined with baking paper lay out granola mix to an even single layer which could take up to 4 oven trays depending on the batch size.
Bake at 120 degrees Celsius for approx. 1 and a half hours.
Let cool to room temp before breaking and storing in air tight containers.
